What's chlorogenic acid ?
The chlorogenic acid is a hemihydrate in the state of needle crystal (water); it turns into anhydrous compound under the temperature of 110 ℃; the melt point is 208 ℃; the water solubility in the 25 ℃ water is 4%, and the solubility is higher in hot water. It is very soluble in ethanol and acetone, slightly soluble in acetic acid ethyl, and insoluble in chloroform, ether, benzene and other lipophilic organic solvents.
